What is a Lapuska?
Lepuska is a traditional Finnish flatbread, often enjoyed in northern Finland and made with a mixture of rye or barley flour and potatoes. This bread has a rustic, hearty flavor and a soft texture, thanks to the addition of mashed potatoes, making it an ideal pairing with butter, cheese, or smoked fish.
I went out to Finland this summer, to meet my good friend Florian Grobéty. We spent a few weeks in a cottage with a lot of different instruments, guitars, hand pan, piano, mandolin, timpani to name a few.
We ended up making this track and eating lots of Lepuska Sandwiches.
